Restaurant Service

Restaurant service involves providing front-of-house skills for hospitality-related premises, such as bars, bistros, coffee shops, banquets and fine dining establishments. Those pursuing a career in restaurant service also need social skills, hygiene, work health and safety, and an understanding of sustainability. A commitment to excellent customer service is a must for people choosing a career in restaurant service, along with an enjoyment of and interest in food and beverage culture, team work, and a willingness to always be at your best.

Cookery

Preparing delicious meals may be the most obvious part of the work of a professional chef, but the job requires much more. Chefs have to prepare budgets, calculate profit margins, control and order stock, and keep on top of the latest food trends such as organic and vegetarian cuisine and healthy eating regimes. Communicating well with a team is also part of the high-pressure environment in a successful kitchen, while good hygiene is essential for the health and safety of customers and fellow workers.

Craft Butchery

Butchery is a highly skilled profession and, as one of the oldest crafts in the world, it is steeped in tradition. Today there are increasing demands from consumers where quality and provenance of product are essential. It is within this environment that we are witnessing a rise in the demand for the craft butcher and the produce they prepare. You will gain an understanding about a range of meat & meat products and the various techniques needed to process/prepare high quality products in a craft butchery. Apprentices will be trained to cut, prepare, package and present meat products to the needs, standards and quality driven by evolving tastes and trends.
